There really is something about the holidays that just makes you want to bake. It’s like the air gets crisper, the leaves start falling and all you want to do is scour Pinterest for recipe ideas on what you can whip together with the ingredients in your pantry. Or is it just me?
With thanksgiving fast approaching, I just can’t help but feel the holiday spirit. I even decorated my very own, real mini-Christmas tree in my apartment. I know it’s early, but I’ll be in California for the Christmas season, so I wanted to be sure that I got in some holiday cheer while in Georgia. That’s right, I even put up ornaments and it’s all lit up for my viewing pleasure. But, more on that later.
Back to these AMAZINGLY delicious Strawberry Oatmeal Bars! These are a treat of my own making, after craving some fresh fruit and finding a recipe for a yummy oatmeal crumble. Fun fact: as a kid, I was never really a big fan of warm fruit-filled desserts. As I got older, though I’ve acquired a bit of a taste for apple pie, blueberry crumbles and other fruit-filled delicacies.
Fresh strawberries make this dish irresistible. And the smell of strawberries wafting around the house is always a huge plus.
Honestly, the oatmeal crumble is what make this entire recipe. You could substitute butter for coconut oil if you wanted, but to get the best nutty taste, butter is your best friend. This mixture is egg-less, so don’t beat yourself up if you find yourself nibbling the crumble crumbs. No judgement here.
Amazing Strawberry Oatmeal Bars
- 1 cup all purpose flour
- 1 cup old fashion oats
- 3/4 cup packed brown sugar dark
- 3/4 cup unsalted (or salted) butter melted
- 1 tsp baking soda
- 2 cups fresh strawberries
- 1 tsp cornstarch
- 2 tbsp lemon juice
- 1 tbsp granulated sugar for sprinkle
Preheat the oven to 350 degrees. Prepare an 8 by 8 inch baking pan.
In a separate bowl, mix melted butter, brown sugar, flour, oats, and baking soda. Press half of the mixture into the bottom of an 8 by 8 inch baking pan.
Bake at 350 degrees for 10 minutes, then remove the pan from the oven.
Spread the 2 cups of strawberries on top of the oat mixture, then sprinkle cornstarch evenly over the top. Sprinkle lemon juice and granulated sugar over strawberries.
Crumble the remaining oat mixture and sprinkle it on top of the strawberries.
Bake for 25-30 minutes, until the crumbs looks golden.
Allow it to cool completely before cutting into bars. Makes about 12 bars depending on how large you cut them.
Try topping this warmed up crumble with some ice cream, and let your taste buds do a little happy dance!
